6 Healthy Breakfast Toast to Brighten Your Morning

Do you have a set breakfast that you eat daily or are you the one who’d like a variety each day. When I was pregnant with my second baby, I hated to have the same thing each day so I came up with a variety of toast recipes to serve my pregnancy cravings with something new everyday.

Toast is such a basic food but you can create so much with changing the toppings. Here’s my ultimate toast topping combination.

  1.  Banana Almond Butter Chia seeds drizzled with honey Toast.

Ingredients:

  • 1 slice of bread of your choice
  • Mixed nut butter or peanut butter
  • ½ tbsp chia seeds
  • 1 banana
  • Honey

Instructions:

  1. Start by toasting the slice of bread
  2. After toasting, top with mixed nut or peanut butter. I love the Kirkland brand from Costco or Maranatha Nut Butters also make delicious nut butters.
  3. Drizzle with desired amount of honey depending on your sweet taste buds.
  4. Next sprinkle chia seeds on the toast.
  5. Cut banana into round shape and place them on your toast.

Classic Sunny Side up Egg on Toast.

Ingredients:

  • 2 eggs
  • 1 tsp olive oil
  • 1 slice of bread
  • Salt and pepper
  • Crushed Chilli flakes

Instructions:

  1. Heat the oil in a medium nonstick skillet over low heat until slightly shimmering, about 5 minutes.
  2. Crack both the eggs into the pan side by side. Cover with a tight lid and cook, uninterrupted, until the whites are completely set but the yolks are still runny, 2 to 2 1/2 minutes.
  3. Slide the eggs out of the pan onto the toast. Season with salt, pepper and chilli flakes.

Cucumber Cream Cheese toast

I love the freshness that comes with the cucumber on a toast on a dull morning. The mix of fresh bread, refreshing cucumber, cream cheese makes this an incredibly delicious yet so easy to put together on a busy morning.

Ingredients:

  • 1 slice of bread
  • 2 TBSP cream cheese
  • 1 sliced cucumber
  • Chaat masala
  • Salt and pepper

Instructions:

  1. Toast your slice of bread
  2. Add cream cheese on one side.
  3. Place the cucumbers slices on the toast and season it with chaat masala, salt and pepper.
  4. Optionally you can also add cherry tomatoes on it. Makes a great combination.

See I told you so easy yet refreshing!! I am sure you’ll go with round two.


Lemony Avocados Tomatoes Pumpkin seeds Toast.

I love avocado toast for breakfast! So filling and those healthy fat from avocado are so good for you!

You can make this in two different ways. If you have time, you can use roasted tomatoes but if you are busy like me, I just go in with raw tomatoes. Feel free to use cherry or roma tomatoes.

Ingredients:

  • 1 avocado
  • 1 tomato
  • 1 slice of bread
  • 1 tbsp pumpkin seeds
  • Chaat masala
  • Salt and pepper
  • 1 tsp Lemon juice

Instructions:

  1. Toast your bread.
  2. Spread mashed avocado or sliced avocado on the toast.
  3. Add sliced tomatoes on top
  4. Sprinkle chaat masala, salt and pepper
  5. Drizzle freshly squeezed lime juice.
  6. Add the pumpkin seeds for the crunch.


Garlicky butter sautéed Mushrooms with crushed Chilli flakes and pepper toast.

Ingredients:

  • 2 tablespoons butter
  • 4-5 thinly sliced portobello or cremini mushrooms
  • 2 small garlic cloves, minced
  •  Salt and pepper
  • 1 slice of bread
  • 2 tablespoons chopped parsley
  • 1 tsp crushed chilli flakes

Instructions:

  1. Heat a pan and add butter.
  2. Add garlic and saute for a minute. Add your mushrooms.
  3. Let it cook for 6-8 minutes until the moisture is released and dried.
  4. Add salt, pepper and chilli flakes.
  5. Add the mushrooms on your toast and top it with fresh parsley.


Avocado onions and pumpkin seeds toast.

Ingredients:

  • 1 avocado
  • Few round rings of onions
  • 1 slice of bread
  • 1 tbsp pumpkin seeds
  • Chaat masala
  • Salt and pepper
  • 1 tsp Lemon juice

Instructions:

  1. Toast your bread.
  2. Spread mashed avocado or sliced avocado on the toast.
  3. Add sliced onions on top
  4. Sprinkle chaat masala, salt and pepper
  5. Drizzle freshly squeezed lime juice.
  6. Add the pumpkin seeds for the crunch.
