Easy Quinoa Salad

This is one of my go to quick and healthy lunch recipe on a busy work day.

Quick, satisfying and so simple to put together. Quinoa is one of the nature’s superfoods that’s rich in protein, fiber, B vitamins. I like to add ton of flavor to this quinoa bowl to make it appealing to my taste buds.

  • FOR THE SALAD: Wash and rinse quinoa. Add 4 cups water to 2 cups quinoa to boil. Bring the water to a boil in a medium saucepan. Cover, reduce the heat and let simmer for about 12 to 15 minutes, until the liquid is absorbed. Turn off the heat and let sit covered for 5 minutes, then fluff the quinoa with a fork. Strain the excess water if needed. Transfer the quinoa to a large bowl and let cool for about 15 minutes. Add your other salad ingredients and toss to combine. Whisk the dressing ingredients in a bowl and add it to the salad bowl. Mix it all together. Taste and season with salt and pepper as desired. Enjoy! Note: I suggest finishing the salad and no leftovers as quinoa and the veggies tend to release water if stored.
