Don’t we always have leftover rice in the fridge to get whipped up into a bowl of yummy fried rice. This is a great way to use your yellow squash and whatever veggies you have on hand in a one pan meal. This is a great toddler friendly recipe. Made in Ghee and cumin seeds with a pinch of turmeric.
Ingredients:
- 1 tbsp ghee
- 1 tsp cumin seeds
- a pinch of hing or asafoetida
- 1 tbsp salt
- 1 tsp lemon juice
- 3 spoons freshly chopped cilantro
- 2 cups of cooked rice. A day old rice is perfect for this dish.
Instructions:
- Heat 1 spoon ghee in a pan.
- Add cumin seeds and hing.
- Add chopped onions and sautee until golden brown.
- Add chopped yellow squash, boiled corn, mushrooms (optional). You can replace yellow squash with zucchini/ carrots/ beans or any veggie of your choice.
- Add salt, pinch of turmeric and lemon juice once veggies are cooked through.
- Add your rice and fresh cut cilantro.
- Cover lid for 2 mins and turn heat off.
